Last night, I watched the 2005 Pride & Prejudice adaptation you recommended, and it was wonderful. I don't know why I never saw it before. The Princess Bride is a classic, and is always a great choice regardless of the time of the year.
You've Got Mail is also a classic. I love any Meg Ryan romantic comedy... Sleepless in Seattle, When Harry Met Sally, Kate & Leopold, etc. A personal favorite for me is French Kiss (1995), with Meg Ryan, Kevin Kline, and Timothy Hutton.
The Fellowship of the Ring is a masterpiece! I can't separate the three films and watch only one. When I watch them, I have to watch all three extended versions... back to back... it's an all day affair.
I ardently admire and love Jane Austen novels and film adaptations. Surprisingly, I've never seen this film, although I love Keira Knightley and have enjoyed Matthew MacFadyen in other projects. I will view it soon! I have seen the 1940 Laurence Olivier/Greer Garson P&P film numerous times. If you haven't seen it, I would recommend it as a classic Hollywood adaptation of the story. My favorite Jane Austen film is still probably Emma from 1996 with Gwyneth Paltrow.
You could do an episode just on Jane Austen adaptations! I would love it, but I'm not sure how many others appreciate Jane Austen. You could also do one on just Meg Ryan rom-coms!
